Growing up, our moms told us we had to eat our vegetables. But all we wanted was dessert! Whoever came up with the idea of making dessert out of vegetables is a true genius! Now we can have vegetables for dessert and mom can’t say a word about it! Well, maybe she can, but it’s more fun to delude ourselves into thinking that we’re eating something healthy simply because it has a vegetable for an ingredient.
Back in the middle ages, sweet vegetables were often used in desserts when sugar was too scarce or expensive. Once sugar became a more readily-available food staple, this practice waned. During World War II, the British government rationed many food staples that were considered a luxury, including sugar. In order to satisfy the sweet-tooths, vegetable-based desserts like carrot cake saw a resurgence. And for that reason, we’re able to celebrate Carrot Cake Day!
